Key ingredients / flavours

Thin sliced topside of beef
Celeriac
Carrots
Leeks
Onion, garlic and good beef stock

The wine match...

Cabernet Sauvignon

A smooth Cabernet Sauvignon full of cassis and black cherry flavours, complemented by hints of coffee and dark chocolate. A great match with red meats, herbaceous dishes and mature hard cheeses.

Why they go together...

Although beef olives, served without a potato accompaniment, are not a heavy meal, the flavours are rich enough to stand against, and be encouraged by, a full bodied red wine such as Cabernet Sauvignon. The tannins in the wine are renowned for complimenting red meat and will enhance the flavour of the dish.
