New Year Salmon And Tomato Salad

Key ingredients / flavours
Perfect for a post Christmas pick me up, this is very easy to make.
Cook some salad tomatoes in the microwave for one minute. Add a dash of Tabasco.
Then poach a salmon fillet (this can also be done in a microwave) for a couple of minutes.
Serve on a salad of baby spinach, mizuna and coriander.
