Tagliatelle
Ham - chopped - could be leftover Christmas ham
Vintage cheese - with plain flour, milk and butter in a sauce
Mushrooms - sliced
Frozen peas
Salt, pepper and parsley

Cabernet Sauvignon

A smooth Cabernet Sauvignon full of cassis and black cherry flavours, complemented by hints of coffee and dark chocolate. A great match with red meats, herbaceous dishes and mature hard cheeses.

Why they go together...

My dish is made with ingredients kept in stock during the festive season and uses left over ham from Christmas. This dish of ham in a cheesy butter sauce is a perfect match to serve with Casillero del Diablo Cabernet Sauvignon because the velvety tannins allow the fruits of the wine to be more noticeable and full-favoured. Finally, this smooth Chilean wine is a red ahead of other wines and is always in my drinks cabinet!!
